Strawberry cream cake
A light strawberry and cream cake – available in spring and early summer.
This is a seasonal cake: we make it while good local strawberries are available. Strawberry flavour deteriorates quickly after long transport, so there is little point forcing it year-round.
Sponge base, strawberry mousse with cream, fresh fruit. Nothing else – glaze or coating would only get in the way of the fruit.
Serving and storage
This is our shortest-lived cake: fresh strawberries begin to release juice on the cream within a day. Best eaten the same day, kept chilled.

Strawberry, cream, egg, flour, sugar, gelatine.
