Raspberry muffin
Soft muffin with whole raspberries and a light cream cheese frosting.
A favourite with children, though not only with them. Whole raspberries go into the batter and open up as they bake, running their acidity through the crumb.
Topped with cream cheese frosting, which is less sweet than classic buttercream and keeps the fruit in front.
Serving and storage
Best at room temperature, baked the same day. Kept chilled because of the cream cheese frosting, but worth taking out a quarter of an hour before eating.

Flour, egg, butter, sugar, raspberry, cream cheese, baking powder.
